Originally from New Orleans, Louisiana, Eric Henderson attended Edna Karr High School before going on to study at Georgia Tech.
At Georgia Tech, Henderson set a team record with 59.5 TFLs, and he ranks fourth in the Yellow Jackets’ history in sacks (25). First-team All-Atlantic Coast Conference accolades and 11 sacks earned him a standout sophomore season in 2003.
As a junior and a senior, he was named to the second team of the All-ACC. After missing four games due to an ankle injury, the defensive lineman led the team in tackles with six sacks. He also contributed to the team by injuring four players during those six tackles.
That year’s Texas Tech defense was one of the nation’s best, and he was instrumental in the team’s upset of No. 3 Miami, which resulted in a 30-yard running deficit. For the third time in his career, he was selected the ACC’s Defensive Lineman of the Week in his first game back from an ankle injury he sustained in 2005.
A four-year letter winner at Georgia Tech (2002–05), he redshirted in 2001 to complete his college career. The East–West Shrine Game in San Antonio, Texas, was held on January 21, 2006, and he participated in it.
